While on my sourdough journey bagels were at the top of my list to make. Why was I making those but buying English muffins?! I use them for so many things too and it couldn’t really be that much harder could it? The answer was no, it’s actually easier! 

First let’s break down the prices. The largest batch I’ve done so far was 5 at once and that made 40 English muffins with a lot of the ingredients and even dough left over. 
To make up 40 English muffins, that’s between 6 and 7 packs so we will round up to 7. At the time I’m writing this, Thomas English muffins are $37.03 for 7 packs!



Of course you could use store brand too. But my store is always sold out. Walmart has a 6 count pack for $1.50, making 7 packs $10.50 

 

That alone is a HUGE difference! But what’s even crazier is that all the ingredients to make these is only $15! One ingredient is optional and the others you likely already have. 
There is going to be a lot left over if you’re buying it all new too. For example, you’re only using a small amount of honey so you don’t need a full size bottle if you have some or can get a little sample bottle somewhere. 

HOWEVER… if you didn’t notice by the name, this is a sourdough recipe so that will require you to have an active starter already on hand. Mine is named Petty Crocker and I purchased my mother here.  
Now for the part you came here for!
Mini Pizzas are SUPER SIMPLE
Preheat your oven to 375F and line a baking sheet with aluminum foil. Cut your English muffins in half and place them on the pan. Spoon the desired amount of pizza sauce on top, then sprinkle with the desired amount of mozzarella cheese. Add any topping of choice and bake for 12 minutes. Viola. Mini pizzas!
I bulk batch these so I only have to make them once a month. 40 muffins makes enough to last us just over a month if we are having them for lunch once a week. After they cool, flash freeze them by lying them on a clean baking sheet in the freezer for about ten minutes. Remove and seal in a freezer bag. Reheat in the oven or microwave.

to bulk make, you will need 40 muffins, roughly 2 pounds of mozzarella cheese, two pint jars of pizza sauce and one bag of mini pepperoni. These are rough estimates because the amount on each pizza is a personal preference. The kids can even load up their own pizzas! It makes for a fun activity on a yucky afternoon.
If you really want to get into it, you can make your own mozzarella, pizza sauce, and English muffins.
To make your sourdough English muffins:
- 1/2 Cup active starter
- 1 tablespoon honey
- 1 cup whole milk
- 3 cups unbleached all purpose flour 
- 1 teaspoon iodized salt
- 1/4 Cup cornmeal (optional for sprinkling)
In a bowl, combine all ingredients by hand And let rest 60 minutes. 
Lightly flour your surface and knead dough for roughly 5 minutes. 
Return to the bowl and let rise over night 8-12 hours.
Return to a lightly floured surface and gently roll out to 1/2 inch thickness. Use a biscuit cutter to cut muffins.
Place on a parchment lined sheet and sprinkle with cornmeal.

Cover and let rise for 60 minutes.
Heat a skillet over low heat. Do not grease!
Cook 4 minutes on each side.
let cool and enjoy!
