No food wasted!

Part of my goals in 2025 is to reduce our food waste as much as possible. 
When I get wrote the blog for mini pizzas with homemade English muffins, I mentioned there was a LOT of dough left over. I had made 5 batches of English muffins. Three regular batches and two whole

The first thing I did was cut the pieces smaller so I could fry them just like I did with the muffins. If you’re using left over muffins that are stale you still cut them up bite sized but not cook them. Then place all the pieces into a casserole dish.
 This next part depends heavily on the amount of muffins or dough pieces you have (also why I’m not listing this as a recipe). I used a 9x13 casserole dish and it was almost completely filled. In a bowl, I mixed one 12 ounce can of evaporated milk, 3 eggs and some cinnamon. I measured with my heart!
Into the fridge the dish went to soak over night. In the morning I took the dish out and let it sit on the counter as the oven preheated to 375. I don’t like putting cold dishes into a hot oven… it terrifies me really!
While the oven heats up I mix the topping. 3 tablespoons of melted butter, a hefty scoop of brown sugar and cinnamon. Again, measured with my heart.

After baked for 45 minutes, I left it to sit and cool before serving to the kids. 
Next time I will use more milk mixture because I wasn’t crazy about the dry top. Otherwise it came out really good! Not bad for left over English muffin dough.
